Stellar James Martin Knives

My wife and I have been fans of the Stellar range of kitchen utensils for over 30 years starting with the purchase of a set of Stellar 1000 Cookware all that time ago and, they have of course stood the test of time. As with many men in the kitchen, we like sharp knives that retain their edge and sharpen and profile well. So, several years ago I bought the James Martin 7” Santoku Japanese style Cooks Knife to compare it with my genuine Japanese, differentially hardened knife and, the Stellar knife stands up to the scrutiny. They’re beautifully weighted, balanced and exceptionally well made knives of perfect thickness.

I then bought my daughter a set of Stellar knives including the Cleaver, Pairing, Utility, 8” Cook’s, Carving and Bread knives, Meat Fork, Honing Steel and was jealous. So, I recently, treated myself to a set including the Cleaver. These knives are built to last and are made of good quality hardened steel so, you really must learn not to abuse them and how to sharpen, hone and profile a knife correctly.

Only use them to cut on a wood board and do not cut through sandwiches on a china plate … please! Keep them away from the dishwasher, wipe them clean and re-hang them on a magnet strip every-time. Then, they will serve you well for life with just the occasional honing wipe on a Steel to remove any burrs. Because the excellent spring carbon steel used to make the knives will require a lot of hard work and skill to maintain the profile if you treat them with disrespect! Conversely the knives will hold their profile longer and only require the edge being worked and polished occasionally … on a 400 and 1000 grit double sided ‘Faitfull’ diamond whetstone.

Treat them with care and they will faithfully serve you with perfect cuts with little effort. The Cleaver, if learnt to use properly will make light work of vegetables reducing cuts of meat and will even dice up a swede far more safely if you work from the outside and take the tension off the root stem first.
